I am very honored and excited to be a guest writer for Vanilla Joy. I just love her blog and all her amazing ideas and giveaways!! To introduce myself I’m Kendra you can read more about me at my blog The Things I Love. I have been blogging for just under a year and love it! I am a stay at home mommy that loves to craft, eat, homeschool my kids, exercise, budget {i know crazy huh!} and be with my family!
Today I am going to share with you one of my, yup, I made it up…..Favorite Recipes!!! Are you excited, well you should be it’s SO yummy!! I have been making this since high school, and have adapted the recipe to all the different holidays! I will call this one my Peppermint Ice Cream Cheesecake with Homemade Fudge Sauce, it is SO yummy!!
Here’s the Recipe…
-
- 1 8oz Carton of Whipped Topping
- 1 8oz Cream Cheese {I got the tub this time, but you can use the bars
- 1 tsp Vanilla
- 1/2 Gallon Ice Cream {This time I did Peppermint, but you can use absolutely any flavor, my husband’s favorite being Vanilla Bean}
- 2 Pie Crusts {I usually use Graham Cracker, but since it was peppermint with Chocolate I thought I would try it with the Oreo Crust.}
- Topping – Crushed Peppermint Stick, Homemade Fudge Sauce, {On other kinds I have added Carmel and Crushed Graham Crackers, or slivered Chocolate}
1. Whip the cream cheese, Vanilla, and whipped topping together until smooth.
2. Whip the ice cream into the cream cheese whipped topping mixture.
3. Pour into pie crusts. This should make enough to fill two pies. I also have made my own crust and made this in a cake pan and it fills an 11×14 cake pan.
4. Freeze for 3 hours.
5. While pie is freezing, make the Homemade fudge sauce. )This is not my recipe so I can’t take credit for it, but it is my cousins so it is at least in the family ;)
Jeanine’s Homemade Fudge Sauce
- 1/2 Cup Butter
1/2 C Milk or Canned Milk
1 Cup Sugar
3 T Cocoa
Mix in sauce pan to a boil full roaring for 1-2 mins
Take off heat and add 1 t Vanilla {Mexican Vanilla is the best}
Once pie is frozen, sprinkle on Peppermint Stick and drizzle with homemade fudge sauce according to your liking on each piece and Enjoy!!
I hope you like it and if you make it, for sure let me know what you think! I want to try this with egg nog ice cream and a Graham Cracker crust for my family party in a couple of weeks!
I hope you enjoy and come say hi to me on my blog The Things I Love. Right now I am doing a 25 Days of Christmas where I focus on fun, but also the real Spirit of Christmas!!
Thanks Kendra – sounds sooo yummy and a great idea for holiday parties!
