Here are two more great recipes from Whole Grains – whole wheat strawberry pancakes and whole wheat oatmeal pancakes.
For me, breakfast is the best place to start incorporating more grains into my diet. My kids loved these two pancake recipes and had no idea they were eating whole wheat and oatmeal!

Oatmeal Pancakes
1/2 c. oats
1/4 c. all purpose flour
1/4 c. whole wheat flour
3/4 c. buttermilk (I use powdered buttermilk – America’s Test Kitchen recommends it!)
1/4 c. milk
1 T sugar
2 T. oil
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 egg
1. Heat griddle to 350.
2. Beat all ingredients until smooth. Cook until puffed and dry around edges. Turn and cook other side until golden brown.
Whole Grain Strawberry Pancakes
1 1/2 c. whole wheat flour
3 T. sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. salt
3 eggs
1 container (6 oz.) vanilla yogurt
3/4 c. water
3 T oil
1. Heat griddle to 350.
2. Mix dry ingredients in one bowl and wet in another. Pour wet all at once into dry and stir until moistened.
3. Cook until puffed and dry around edges. Turn and cook other side until golden brown. Top with strawberries and strawberry yogurt (or bananas and blueberries) and serve .
