Blueberry Buttermilk Muffins
2 1/2 c. flour
1 c. sugar
1/4 t. salt
2 1/2 t. baking powder
2 eggs, beaten
4 T. melted butter
1 c. buttermilk
1. Mix dry ingredients in a large bowl. Make a well in the center.
2. In a small bowl, beat eggs with a fork, and add butter and buttermilk.
3. Add liquid to dry ingredients, mix just enough to moisten all ingredients.
4. Gently fold in berries.
5. Bake at 400 degrees for 20-25 minutes.
This recipe works just fine with frozen berries, like the bag you can get at Costco. Just leave the berries in the freezer until you’re ready to throw them in the batter. I make 2 or 3 batches and freeze them so I can have a fresh blueberry muffin every morning for breakfast.
